We love the spring weather and the fresh veggies that come with it! We’ve been searching for local companies that sell fresh organic food. Today’s adventure took us to a local market with an awesome variety of organic food to choose from. We found a beautiful display of fresh veggies and herbs. So tonight’s dinner…. Cowboy Caviar, one of our favorite meatless meals. We sometimes serve it for lunch or an appetizer but it’s great for dinner too. It like a hardy salsa that can be served with corn chips, in a tortilla or you could even add grilled chicken!
Ingredients:
2 avocados, diced
2 roma tomatoes, diced
1 can (15oz) black beans, drained and rinsed
1 cup frozen or fresh sweet corn
½ cup cilantro, chopped
½ cup red onion, diced
2 Tbsp. red wine vinegar
3 Tbsp. olive oil
1 tsp. salt
½ tsp sugar
1 clove garlic, minced
½ jalapeno, chopped (optional)
Directions:
In large bowl, mix prepared avocado, tomatoes, beans, corn, cilantro, and red onion. In another bowl mix together the red wine vinegar, olive oil, garlic, salt, sugar and jalapenos. Pour over the bean mixture and stir gently to coat. Refrigerate for one hour or more. Stir gently again and serve with tortilla chips.
